
Amber sits on the seventh floor of The Landmark Mandarin Oriental in Central and has been the hotel's flagship since 2005. Culinary director Richard Ekkebus, who is Dutch-born and French-trained, runs a modern French kitchen known for cutting back on dairy and refined sugar. The restaurant holds three stars in the 2026 Michelin Guide Hong Kong.
Menus change with the seasons and are served as multi-course sets at lunch and dinner, with vegetarian versions available. Long-running dishes include aka uni with cauliflower, lobster and caviar, and duck foie gras with pink peppercorn, beetroot and red shiso. Look out too for Normandy scallop with salt-roasted celeriac and hazelnut butter, and Ping Yuen chicken from the New Territories.
Choose it for a milestone celebration or a top-end business lunch. Lunch is about HK$1,000 a head and dinner about HK$2,500, and weekend lunch offers four or five courses. Shorts, sportswear and flip-flops are not allowed. Book through SevenRooms; the Somm wine bar next door shares the cellar.
