Colette opened in September 2025 on the ground floor of KROMO Bangkok, a Curio Collection by Hilton hotel on Sukhumvit Soi 29, between Asok and Phrom Phong. It is named after an imagined muse of Thai-French heritage, and the dining room is finished in warm shrimp-paste tones with sculptural metal artworks overhead, a busy open bar and a candlelit terrace. Executive chef Chris Beverley, who previously cooked in London, runs the kitchen.
The cooking is French at its core with Bangkok touches. At dinner look for tuna tartare, beef and onion soup, foie gras on brioche, moules marinière, steak frites, dry-aged duck breast and a whole roast baby chicken with miso sauce, then a mille-feuille with Earl Grey cream or pandan and coconut madeleines. Brunch brings a Siam Benedict and Colette French toast, and there is an afternoon le goûter. A few dishes, such as lobster tagliatelle and sumac-roasted aubergine, stray beyond France.
As the hotel's main restaurant it also serves breakfast, so it is open from early morning until late. It suits a relaxed dinner with friends, a weekend brunch or drinks on the terrace, and the bar pairs cocktails with natural and orange wines. Reviewers put dinner at roughly THB 2,000 or more a head. It is a short walk from BTS Phrom Phong and Asok and MRT Sukhumvit; book through the hotel or Instagram.
