
Signature occupies the 11th floor of VIE Hotel, a few steps from Ratchathewi BTS. The art deco room has an open kitchen and seats only around 20 people each evening, so service feels personal. Chef Thierry Drapeau, who held stars in France's Loire region, brings his 'cuisine of the soil' approach to Bangkok, and the restaurant has kept its Michelin star for four years running.
Dinner is a five- or eight-course tasting menu built around herbs and edible flowers. The house signature is Challans duck from Maison Burgaud, cooked slowly in butter and served with mogettes beans from the Vendée, a recipe from the chef's grandmother. Bread is made from a family sourdough starter, and butter is finished at the table. Langoustines and fish come from a fisherman in Les Sables-d'Olonne, and the meal can close with a modern riz au lait or a flambéed crêpe Suzette.
Best for anniversaries and special dinners. Booking ahead is essential given the size of the room, and wine pairings are offered with both menus. Parking is available at the hotel.
