
Fleur de Sel is the restaurant of chef-owner Alexandre Lozachmeur, who spent six years with Alain Ducasse in Paris before leading kitchens at hotels and Au Petit Salut in Singapore. The Tras Street shophouse centres on an open kitchen with counter seats, so you can watch him plate, alongside a quieter room of white-clothed tables.
Cooking is classical with a lighter touch, served as set menus. The degustation dinner runs through Atlantic crab with balsamic sorbet, seared duck foie gras, lobster in two services, white asparagus with Parma ham and roasted French pigeon. The rum-soaked baba glazed with passionfruit is the signature dessert. Lunch is shorter, with dishes such as braised wagyu tongue, mini Comté ravioles with truffle and Angus beef tartare.
It suits a special-occasion dinner, an anniversary or a client lunch. Dinner sets start around S$148++ and lunch around S$78++. The dress code is elegant chic, and dinner runs in two seatings. Book through Chope or by email.
