
Bistro Gaston, opened in 2019 as Gaston Burgundy Bistro, is run by a Burgundy-born owner who set out to bring the food and wine of his home region to Keong Saik Road. The shophouse room feels like a country bistro, and the Michelin Guide lists it in its 2026 Singapore selection.
The menu sticks to Burgundy classics. Begin with eggs poached in red wine sauce (œufs en meurette), a dozen escargots or a royale of mushrooms, then move on to slow-braised bœuf bourguignon or pôchouse, a river-fish stew finished with white wine. Foie gras is a regular starter, and profiteroles are the dessert to order. The wine list is the other draw, with bottles from across the Côte d'Or.
It suits a long dinner for two or a relaxed lunch, and there are set lunch and weekend brunch menus. Book through Chope or call. Across the street, La Cabane by Bistro Gaston is a sister wine bar that also takes private dinners.
