JAG moved from Duxton Road to the first floor of the Singapore Tyler Print Institute, a gallery building on Robertson Quay. The room is calm and pale, with sage-green upholstery, brass details and rattan chairs, and the kitchen holds one Michelin star in the 2026 guide for cooking that puts French vegetables and herbs first, with meat and seafood in support.
Diners choose between three tasting menus, from the Light to the Opulent Experience, or a seasonal à la carte where everyone orders a main. Recent menus have included wagyu tartare, foie gras with apricot, Boston lobster and Sanchoku wagyu striploin, with bread served alongside salted and herb butters. Leave room for the cheese trolley, which the Michelin inspectors single out for its range, and for petits fours with coffee.
This is a special-occasion address for couples and serious diners rather than a quick lunch. Tasting menus at lunch start at around S$175 before tax and service. Book through the restaurant's site; the Alpine Room takes private groups of seven to twelve. Lunch runs Wednesday to Saturday, dinner Tuesday to Saturday.
