Les Amis, on the ground floor of Shaw Centre, has long been the reference point for classical French cooking in Singapore. Chandeliers, polished marble and leather chairs set a formal tone, and the bread, cheese, ice-cream and champagne trolleys are all part of the ritual. Executive chef Sébastien Lepinoy sources most of his produce directly from France.
The autumn carte lists Normandy blue lobster, Roseval potato petals topped with caviar, Loctudy langoustine, Challans duck paired with foie gras, and venison crusted in truffle and juniper. The sixteen-part tasting menu runs through scallops, wild turbot with vin jaune sauce and a cheese trolley before finishing with the dark chocolate tart and a warm apple soufflé with Calvados. A Monday-to-Thursday three-course prix fixe costs S$205.
