Belgian-born chef Emmanuel Stroobant opened Saint Pierre in 2000 and has held two Michelin stars since 2019. The restaurant now sits on the second floor of One Fullerton, where floor-to-ceiling windows look across the bay to Marina Bay Sands and the Singapore Flyer, and the room is dressed in soft pinks and white linen.
The cooking is French in technique with Asian ingredients used carefully. Recent menus have included Manjimup marron with oba jelly, Akita abalone with Hokkaido scallop mousse and ponzu, Brittany blue lobster with turnip and yuzu, Omi beef with sansho pepper, and Araguani chocolate with hazelnut and Szechuan peppercorn. Dinner is built around the Elegance, Opulence (seven courses, S$398++) and Grand Opulence tasting menus, with a vegetarian version.
It suits anniversaries and special-occasion dinners, especially at a window table. Set lunch starts at S$198++ for three courses, Tuesday to Friday. Book through TableCheck. Children are welcome with a set children's menu, and corkage is waived on Tuesdays.
