
Maison Boulud opened in 2024 as New York chef Daniel Boulud's first restaurant in Singapore. Designed by Joyce Wang Studio, it spreads across two floors of The Shoppes, with a ground-level space facing the bay promenade and a dining room of arched booths and patterned floors on the basement level.
The menu sticks to French brasserie staples done carefully: moules frites, a tartare of salmon, tuna and crab, potato pavé with caviar, a truffle croque monsieur and a Wagyu côte de boeuf for sharing, plus oysters and seafood platters. Seasonal menus change through the year; the 2026 'Terroirs de France' set included foie gras torchon and roast duck breast with cherry bordelaise.
It works for business lunches, pre-show dinners and visitors staying at the resort. Weekday lunch sets run S$56–65, a three-course dinner set is S$75 and weekend brunch is S$78. The Level 1 bistro serves shareable plates such as croque monsieur and a French hot dog, with terrace seating from 5pm. Book through the Marina Bay Sands site.
