
La Brasserie occupies the waterfront side of The Fullerton Bay Hotel, with two salons and a private room framed by ten-metre-high windows and a terrace looking across Marina Bay. The setting is polished but not stiff, and the kitchen leans towards the cooking of southern France alongside brasserie classics.
At dinner, start with onion soup finished with brisket and black truffle, escargots in garlic butter, or duck foie gras with mirabelle plum. Mains include French duck confit, lobster thermidor by the half or whole, glacier toothfish, a Provençal vegetable tian and steaks from the grill with béarnaise or bordelaise. The set lunch runs to two or three courses, and the set dinner offers three or four, with a vegetarian version.
Come for business lunches, anniversaries or a weekend brunch by the water. Book by phone, email or Chope. Dress is semi-casual, and shorts are only allowed at weekend brunch. Parking is free with a minimum spend.
