
Brasserie République models itself on the grand Paris brasseries of the early twentieth century, with exposed brick, bentwood chairs, wine bottles on display and a leafy terrace on Jalan Danau Tamblingan. It is open from 7am until late every day, so it moves from breakfast café to lunch spot to dinner room as the day goes on.
The French side of the menu is the part to focus on. Start with escargots in garlic butter, soupe à l'oignon or the duck and pork pâtés with bread. For mains, the coq au vin with bacon and mushrooms and the slow-cooked bœuf bourguignon are the most praised, while steak au poivre, steak frites with Café de Paris butter and canard à l'orange suit bigger appetites. A shorter international list adds burgers, pasta and pizza for less adventurous diners.
Indoor and outdoor seating handles large groups well, and it suits a relaxed family dinner or a birthday. Reservations and private events are arranged on WhatsApp. Prices are subject to 16% tax and service.
