
Bouillon sits on Pound Lane, one of the stepped streets running up from Sheung Wan, behind a dark shopfront lettered with the day's oysters, caviar and Champagne. Inside it is snug and old-fashioned in the Paris manner, with the kitchen making everything on site from raw ingredients and a stated focus on organic, certified-traceable sourcing.
The summer 2026 carte reads like a bistro roll call. Start with Burgundy snails in garlic and parsley butter, grilled bone marrow, onion soup under Gruyère, or a hand-cut tartare of Blonde d'Aquitaine beef. Mains include duck leg confit, beef cheek bourguignon, chicken with morels and vin jaune, and a Rossini of beef fillet with foie gras. For a table, there is a whole Dover sole or a 1kg rib-eye, and the tarte tatin with salted butter caramel is a good finish.
